Pollulan is a linear homopolysaccharide of a kind of glucose unit often described as maltotriose, between which is then linked by an α-(1~6) glycosidic bond. The structure shares similarity to linear starch. Pullulan is produced by the fungus Aureobasidium pullulans, and is a naturally occurring polysacchairide.

Applications of pullulan

Pullulan has been used as a food ingredient for over 20 years in Japan, and it has Generally Regarded As Safe (GRAS) status in US.

 Food

Pullulan is a versatile ingredient providing a technology platform for product innovation. Pullulan is soluble in water and forms a viscous but non-gelling aqueous solution. The viscosity is only slightly affected by changes in pH or salt. Functional applications include use as an adhesive, binder, and thickener to modify or maintain the tecture of food. Pullulan is also an excellent film-former, producing a film that is heat sealable with duperior oxygen barrier properties, and can be printed on.

 Cosmetic

Pullulan is a naturally occurring polysaccharide. Pullulan has good adhesive and foam retention properties when dissolved in water, but without high viscosity. These properties enable pullulan to be used for creating luxuriant smoothness for skin, haircare and facial cleansing products. Furthermore, the excellent adhesive property of pullulan also provides an opportunity to create nee products such as facial masks that can be easily washed away. Pullulan produces easily dissolvable films, making it can effective and stable carrier for active ingredients, colors and fragrances.

 Pharmaceutical

Pullulan is a water-soluble neutral polysaccharide produced from starch syrup by fermentation. Available as a white powder, it is essentially odorless, flavorless, and stable. Pullulan has better ”workability” and stronger binding characteristics compared with other binders commonly used in pharmaceutical tableting. In the granulation process, the low viscosity and high adhesive strength enables pullulan to be used effectively. The good binding and film-forming property of pullulan make it a valuable ingredient for coating tablet. Pullulan helps produce smooth, highly glossed and strengthened tablets.

A unique benefit of using pullulan for film coating is its exceptional oxygen barrier property that can help stabilize active ingredients against oxidation and noticeably reduce strong or unpleasant odors from tables or coated particles. Pullulan can also be used to make non-animalcapsules and has the same exceptional oxygen barrier function as the film. Pullulan is listed on the USP-NF(United States Pharmacopoeia--National Formulary) and JP (Japanese pharmacopoeia).

Pullulan has shown unique potentials to apply in tobacco industry. It can seal aroma of tobacco and keep the tobacco moisture. Pullulan is a very promising agent to enhance tobacco taste and grade.
