This one is really delicate in flavour and uses broccoli, zucchini, spinach and leek combined together with a fresh pesto of basil and parsley. I wanted this to be healthy as well as delicious. The béchamel is steeped with bay leaves to add depth of flavour and I use plenty of cheese throughout to make it really melt in your mouth. Top quality gluten free lasagne sheets gives the dish beautiful structure. The balance of all three elements makes for an irresistible dining experience.
